A South of France Cooking Class

with Carol Reader

It is said that birds of a feather flock together, and that saying certainly holds true for many of the women I know. Thanks to the longtime friendship of our daughters, Carol Reader and I have become close over the years and share a love of cooking and eating fine foods. We like to toss around words like Le Creuset, Sur Le Table, Central Market and The Oil & Vinegar Store as self-proclaimed ‘bon vivants’. While this Missouri girl has come a long way since her beginnings in the kitchen, Carol takes it to a whole other level after many years of living in Monaco, France with her family. I was thrilled when she agreed to come to Huffman from her home in Houston and share a few of her treasured recipes with the Commons Ladies Cooking Club.

The recipes Carol taught us how to make are unique to the South of France, where they are often enjoyed al fresco with a nice glass of Rosé de Provence. Pissaladière (onion bread with black olives and anchovies – from Nice), Tourte de courgettes (zucchini pie -rice, egg, parmesan – from Nice) and Barbajuans (spinach/chard/parmesan, onion, leeks, egg in a fried little pocket –made only in Monaco). Several attendees noted that Barbajuans are very similar to empanadas, which have their origins in Galicia (Spain) and Portugal. With so many other delicious French recipes to explore (i.e., crepes, onion soup, poivrons grilles), the club is anxious to have Carol out again for another fun (and wine-filled) afternoon. Gumbo & Strawberry Shortcake

Thanks to Bonnie and Mo! …….  We learned how to make a sausage and chicken gumbo and strawberry shortcake … whipping cream with melted white chocolate. Need I say more?

Taco Night!

27 people enjoyed a great time November 20th at Linda Dixon’s house.  Maria taught how to make Salsa.  Then the rest of the merry makers joined in to enjoy a delicious Taco Bar.

Latest Fun!

10 ladies enjoyed a great lunch June 22nd at 11:00 at Maria Bianco’s house.  Maria taught how to make a hamburger and sausage roll.  It is hamburger, sausage, potatoes, and onions roll in dough. It was delicious!

We had a great time cooking on May 21st at Mary Desha’s home.
Valeska cooked Lebanese food; here is a description of the menu:
oven dish with eggplant, ground beef and tomato sauce. it does include pine nuts
cucumber, tomato, red onion, mint salad, with homemade dressing


Cooking Club

Twice she has held a pizza dough making class and both times it was well attended.

Classes are actually very social – usually including a glass of wine – sometimes midday – sometimes evening.

Maybe you have a treasured family recipe and would volunteer to share with others – Maria would welcome you “hostessing” this group. She promises to assist you for a fun filled event.
